Carmina had a family member who was the one who introduced Sugi Japanese Restaurant to her five years ago. We used to dine there every time there was a special occasion. Upon entering on the left side there will be someone to assist you asking how many you are, so they have found a table for you.  I suggest if you are a lot, you can call ahead and make a reservation.  After entering five years later you notice the decoration and the menu has upgraded. Looking at the menu got me so confused good thing the server was able to explain it to us. Mom Violy's common Japanese food is always the chicken teriyaki bento box. The person helping us said they have items off the menu. Mom Violy was able to get her favorite chicken teriyaki bento box includes with Japanese rice and miso soup. Mom Violy also wanted some sushi, yet she cannot remember what she had ordered. Elle and her friend Esa shared mixed vegetable tempura and sushi that had eel. Carmina decided to try something different with her leftover grilled chicken. Those who love to eat grilled cheese you can add another ingredient to your sandwich. It is a very easy meal to prepare.  Grilled Cheese with Grilled Chicken Sandwich Recipe Ingredients: Leftover grilled chicken (shredded) Butter (any brand) Cheddar Cheese (sliced) Sliced Bread (any brand) Preparing: On a plate on a slice of bread spread butter than add the grilled chicken overlap the sliced cheddar cheese put a slice of bread on top. Do the same on how many sandwiches you plan to eat. Cooking: On a non-stick frying pan add small amount of butter let it melt add one sandwich at a time flip both sides having it completed toasted. Carmina notice in the Philippines the weather climate is changing. People say when it is hot a way to cool us down is to drink something refreshing. I didn't quite have any fresh fruits off hand. Someone requested for you to cook soy chicken while looking in your home to see what ingredients to prepare the dish. I decided to marinate the chicken overnight by adding all the ingredients together. All you have to do is add the following: 1 Tbsp. - Brown Sugar 1 Tbsp. - Black Pepper 1/4 Cup - Kikkoman Lite Soy Sauce 1 Tbsp. - Garlic Powder 1 - Bay Leaf 1/4 Cup - Water 1/2 Kilo Boneless Chicken Thigh Fillet  I place it in a plastic container with a lid putting in the refrigerator. Carmina notices her banana is getting over ripped before getting spoiled. Might as well make something with it. Since I had some lumpia wrapper came across something I use to make.  It was almost merienda (snack) time in the Philippines we find food to eat. Carmina's Banana with Brown Sugar and Cinnamon Recipe Ingredients: Any type of Banana (slice in the middle) Brown Sugar (depending on you) Cinnamon Powder (depending on you) Lumpia Wrapper Water to seal Cooking Oil First Step: Combine the brown sugar and cinnamon in a small bowl mix together.  Wrapping: On a plate place a lumpia wrapper and one piece of banana place brown sugar and cinnamon fold up by closing both ends and roll it up seal with water on the end. My challenge to myself is cook what ingredients I have available. Today I had used my leftover rice to make fried rice.  I also had leftover frozen mixed vegetables from the lumpia that was of my ingredients. Carmina's Fried Rice Recipe Ingredient: Leftover rice 2 Tbsp. - Lite Kikkoman Soy Sauce 2 Tbsp. - Oyster Sauce 2 Pieces - Garlic (minced) 1 Cup - Frozen Mixed Vegetables 1 Tbsp. - Butter 2 - Eggs (scrambled season with salt and pepper) Cooking: The first thing we will do is add some butter on the pot placing the scrambled eggs on one side. On the other side add remaining butter add the garlic once egg is fully cooking leave in the pot and begin cutting it up with a spatula. Long time ago we had an employee who used to make maruya which is banana fritters. It is a popular Filipino dessert during merienda. Carmina had ripped saba that needed to be eaten somehow. I didn't quite have any sugar in the house and improvised by using honey. Carmina's Healthy Version Banana Fritter Recipe Ingredients: 4 Pieces Ripe Saba (mashed with a fork) 1 - Egg 3/4 Cup - All-Purpose Flour 1 - Tsp. Cornstarch Cinnamon Powder (depending on you) 1 - Tbsp. Honey optional or Sugar (depending on you) Preparing Batter: In a bowl mash up the banana with a fork, add egg that has been beaten, all-purpose flour, cornstarch, cinnamon powder and honey to the mixture. Frying: In a frying pan add cooking oil and use a measuring cup using to scoop the batter adding it to the pan cook both sides. Use a strainer to remove excess oil and place on a serving plate. Carmina has been craving for vegetable lumpia. Anyone who has mentioned to me that they have eaten for lunch and lumpia comes to mind. I begin to crave for it even more. I decided to make my own at home. It came by memory when I was purchasing my ingredients what Mom Violy use to buy when making it long time when I was a kid. Mom Violy uses to buy frozen mixed vegetables at the grocery store. I remembered Mom Violy puts fresh beansprouts. She would always ask me to remove the roots while I was watching television. Carmina wanted to make her own home-made wonton, but it turns out to be the same lumpia shanghai recipe of Manang V. Only difference my ingredients I added became my own special recipe. The green onion I had growing in my window used some of it cutting the tips. I also purchased half kilo fresh shrimp known to use for tempura at Farmers Market.
