In celebration of Cinco de Mayo Carmina decided to order at Chili's Restaurant to try their chicken enchilada pasta for the first time. All I can say for one person it is a big serving that can last me three days straight eating for a light eater I am. Chicken Enchilada Pasta has the following ingredients penne pasta and fettuccine pasta with grilled chicken, corn, onions, melted chipotle cheese, cilantro aioli, tortilla strips, pico de gallo and corn.
