My challenge to myself is cook what ingredients I have available. Today I had used my leftover rice to make fried rice.  I also had leftover frozen mixed vegetables from the lumpia that was of my ingredients. Carmina's Fried Rice Recipe Ingredient: Leftover rice 2 Tbsp. - Lite Kikkoman Soy Sauce 2 Tbsp. - Oyster Sauce 2 Pieces - Garlic (minced) 1 Cup - Frozen Mixed Vegetables 1 Tbsp. - Butter 2 - Eggs (scrambled season with salt and pepper) Cooking: The first thing we will do is add some butter on the pot placing the scrambled eggs on one side. On the other side add remaining butter add the garlic once egg is fully cooking leave in the pot and begin cutting it up with a spatula. Long time ago we had an employee who used to make maruya which is banana fritters. It is a popular Filipino dessert during merienda. Carmina had ripped saba that needed to be eaten somehow. I didn't quite have any sugar in the house and improvised by using honey. Carmina's Healthy Version Banana Fritter Recipe Ingredients: 4 Pieces Ripe Saba (mashed with a fork) 1 - Egg 3/4 Cup - All-Purpose Flour 1 - Tsp. Cornstarch Cinnamon Powder (depending on you) 1 - Tbsp. Honey optional or Sugar (depending on you) Preparing Batter: In a bowl mash up the banana with a fork, add egg that has been beaten, all-purpose flour, cornstarch, cinnamon powder and honey to the mixture. Frying: In a frying pan add cooking oil and use a measuring cup using to scoop the batter adding it to the pan cook both sides. Use a strainer to remove excess oil and place on a serving plate. Carmina has been craving for vegetable lumpia. Anyone who has mentioned to me that they have eaten for lunch and lumpia comes to mind. I begin to crave for it even more. I decided to make my own at home. It came by memory when I was purchasing my ingredients what Mom Violy use to buy when making it long time when I was a kid. Carmina wanted to make her own home-made wonton, but it turns out to be the same lumpia shanghai recipe of Manang V. Only difference my ingredients I added became my own special recipe. It is my first time seeing baked goods inside 7 Eleven. Or never really ever paid attention when walking inside since it is located at the left-hand side across from the cash register.  Every 7 Eleven branch is all different when you enter inside, but the one near our home I was able to see baked goods.
