Carmina is traveling to the United States to spend time with her family. My dad planned a family gathering for Mother's Day at their favorite Pinoy restaurant . Since reservations aren’t possible, we arrived an hour early to ensure we could get a table for twelve before everyone else showed up. As my dad approached Isla Grand , the branch we visited in Pleasant Hills, California , the host at the door said they could prepare a table for twelve at five o'clock. Later, the server called my dad's name and guided us to our table. The place was bustling with people enjoying meals and celebrating Mother's Day. Filipino Torta Eggplant Recipe


For those who are vegetarian or just want to eat something healthy and want to try something new than eating plain fried eggplant this may be for you.

Eggplant torta is like eating a eggplant omelet in your terms we eat it as a Filipino dish for enough to add in one meal for lunch or dinner.

Filipino Eggplant Recipe
Ingredients:
  • 4 Pieces Eggplant
  • 2 Eggs
  • Black Pepper (add to your taste)
  • Salt (add to your taste)
  • Patis (fish sauce) (add to your taste)
Step 1:
  • Place eggplant on your stovetop grill it until cooked on both sides
  • Remove the skin from eggplant while hot
  • Set aside place on a plate
Step 2:
  • Beat egg in a big bowl enough to place the eggplant inside
  • Add black pepper, salt and patis
  • Dip eggplant one at a time
Step 3:
  • Heat frying pan with little amount of cooking oil
  • Once hot place eggplant on frying pan and cook both sides
  • Strain with paper towel on plate.
Best serve with tomato ketchup or sweet chili sauce.
