Last week I went grocery shopping and purchase some vegetables planning to make some chicken afritada, chicken curry and other dishes with meat.
All a sudden I had skin allergies and was told to stay away from any meat and fish we have to figure what we can cook out of our meal.
I was informed by my cousin Mariles not to eat any food that is fried.
I don't have access of a oven in the house.
I have to think what I can eat with my vegetables.
Carmina decided to make potato salad with asparagus and carrots. I didn't want to eat the carrots raw. I boiled it along with my potatoes, and asparagus.
Potato Salad with Asparagus and Carrots Recipe
Ingredients:
- 1 - Small Carrot (peel and chopped into cubes)
- 1 - Large Potato (peel and chopped into cubes)
- 6 Pieces - Asparagus (chopped into cubes)
- 1/2 - Small Onion (chopped)
- Mayo (any brand)
- Black Pepper (based on your taste)
- Salt (based on your taste)
Cooking Instructions:
- In a small pot add water and the vegetables potatoes, carrots and asparagus when water begins to boil place on low heat put a timer for 15 minutes until vegetables are fully cook.
- Use a fork to determine when it is already soft.
- Use a strainer to drain the water transfer cooked vegetables into a bowl add the onions, mayo, season with salt, black pepper and mix well.
- Can be eaten hot or cold all depends on your preference.
