Tito Boni's birthday was on the month of May, but since we're on vacation in California it was delayed. Tita Edna decided to have the celebration meal at Zensho for our lunch. Tito Boni and Tita Edna had arrived at the restaurant to pick our seating arrangement. Carmina had picked up Mom Violy at her home and met them at Zensho. We had arrived at 11:30 AM. Not many customers during the time of arrival later people started coming in even if the forecast was raining. Tito Boni, Tita Edna and Mom Violy had ordered the food that will be cooked in front of us. Last week I went grocery shopping and purchase some vegetables planning to make some chicken afritada, chicken curry and other dishes with meat.
All a sudden I had skin allergies and was told to stay away from any meat and fish we have to figure what we can cook out of our meal.
I was informed by my cousin Mariles not to eat any food that is fried.
I don't have access of a oven in the house.
I have to think what I can eat with my vegetables.
Carmina decided to make potato salad with asparagus and carrots. I didn't want to eat the carrots raw. I boiled it along with my potatoes, and asparagus.
Potato Salad with Asparagus and Carrots Recipe
Ingredients:
- 1 - Small Carrot (peel and chopped into cubes)
- 1 - Large Potato (peel and chopped into cubes)
- 6 Pieces - Asparagus (chopped into cubes)
- 1/2 - Small Onion (chopped)
- Mayo (any brand)
- Black Pepper (based on your taste)
- Salt (based on your taste)
Cooking Instructions:
- In a small pot add water and the vegetables potatoes, carrots and asparagus when water begins to boil place on low heat put a timer for 15 minutes until vegetables are fully cook.
- Use a fork to determine when it is already soft.
- Use a strainer to drain the water transfer cooked vegetables into a bowl add the onions, mayo, season with salt, black pepper and mix well.
- Can be eaten hot or cold all depends on your preference.
