Mom Violy and Carmina’s dining experience at Dean & DeLuca

  Mom Violy told me she wanted to order the Paella Negra from Dean & Deluca. Carmina suggested we dine in since we’d never really tried their main courses, always just getting takeout with the cream puffs . Mom Violy agreed, and we arrived about thirty minutes before the lunch rush began. The service was very slow, even though we had ordered ahead of time. They mistakenly brought out the Paella Valenciana , despite Mom Violy repeating the order three times to the person who took it. It turned out the cook on duty made the error, even though it was written down clearly. We know Paella Negra takes a long time to prepare, which is why Mom Violy had requested it to be cooked beforehand. She wanted it as her main meal, but because of the mix-up and feeling hungry, she took a piece of Carmina’s Turkey Club Sandwich and asked for the bacon on the side. Kalderetang Kambing Recipe

During the time when my mom and I we're not living in the Philippines we went to a birthday party of her best friend in their province at that time they had served authentic Filipino dishes. 

I remember my mom always told me as a kid not to eat everything at a party especially when you're traveling because you don't know what kind of meat they use other than beef, pork and chicken.

When I was younger, I was very picky so there we're a limit of selected food I would eat at a Filipino party and to me I feel I am safe to eat whatever they had offered to me.

My mom and I we're seated at the table as her best friend kept offering food to my mom to eaten, they had offered her kaldereta which was one of her dishes is normally eat. 

As my mom was eating, she had notice there was a smell on the meat and asked her best friend what was it made of and she said it was kambing (goat). My mom told her friend she doesn't eat goat.

Kalderetang Kambing Recipe
Ingredients:
  • 1 - Kilo Goat Meat (cubed)
  • 1 - Cup Vinegar
  • 1 - Tsp Garlic (minced)
  • 1/2 - Onion (chopped)
  • 3 - Pieces Ripe Tomato (diced)
  • 3/4 Cup Bell Pepper (sliced)
  • 1 - Piece Carrot (peel and cubed)
  • 1 - Piece Potato (cubed)
  • 1 - Tsp Worcestershire sauce
  • 3 - Cup Water
  • 1/2 - Cup Tomato Sauce
  • 1/2 - Cup Eden Cheese
  • 2 - Pieces Siling Labuyo - chili pepper (chopped)
  • Patis to your taste
Preparing the Goat Meat:
  1. Soak the goat meat under cold water in a bowl with salt to remove the smell.
Marinate:
  • In a bowl combine vinegar, garlic, onion, Worcestershire sauce and salt with goat meat for two hours.
  • Drain liquid from meat.
Cooking Instructions
Step 1:
  • In a pot with small amount of cooking oil fry the meat until brown place the meat aside.
Step 2:
  • In a new pot put a small amount of cooking oil when hot add garlic, onion and tomato sauté together than water, potato, carrot and bell pepper cook until vegetables are tender.
  • Add cheese, tomato sauce, siling labuyo and goat meat
  • After cheese melted it is ready to serve in a serving bowl.
