While traveling around the world, the family visited the Philippines and decided to combine a double birthday dinner with James. In our chat group, we discussed which restaurants we’d like to dine at, and Mom Violy has been eager to try the all-you-can-eat lobster her best friend recommended at Solaire. Carmina took charge of making the reservation through Solaire's Resort  website and asked the family which seating time they preferred, choosing between two options with different time frames. Carmina registered it under Mom Violy's name and phone number. She received an email for our confirmation, and a week beforehand, a reminder was sent to Mom Violy's mobile to confirm if we were going ahead or not. Carmina replied to the SMS since Mom Violy wasn’t sure how to do it. We were told to arrive fifteen minutes before our scheduled entry time, which was 5:30 p.m. on February 12, 2026. Filipino Ukoy Recipe


I had a best friend of mine who was pregnant when I was living in California and she was craving for ukoy which are shrimp and vegetable fritters.


Her husband was looking for a restaurant that sells it during the time she was craving for it. It just happen when she had craving for it. The restaurants we're closed.

Her husband called, me up if I can cook his wife her ukoy. I couldn't say, no.

This is a popular dish in the Philippines. It is also a favorite of mine.

Ingredients:
  • 1/2 cup medium shrimp - remove the head and shell
  • 1 1/2 cup bean sprouts
  • half of squash - peel skin from squash and grate
  • 1 cup all purpose flour
  • 1 cup corn starch
  • 1 1/2 tsp baking soda
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 egg well beaten
Step 1:

Combined all ingredient together mix well

Step 2:

Fry in frying pan with oil by using a half cup measuring cup and pour the ukoy batter

Flip each side until cooked

Best to put the ukoy on a strainer or paper towel to drain the oil

Dipping sauce:

Ingredient:
  • 1/4 cup white vinegar
  • 3 cloves peeled chop garlic
  • Black pepper ( depend on your taste)
  • small amount of soy sauce (optional)
