Later, the server called my dad's name and guided us to our table. The place was bustling with people enjoying meals and celebrating Mother's Day. This is the Bicol express the healthy version given by my friend who always cooks this for her family.
My friend uses chicken than what people normally use which is pork.
Bicol Express Recipe
Ingredients:
- 2 Kilos - Chicken Breast (sliced thinly)
- 1/4 Cup - Ginger (peel and slice thinly)
- 3 Cloves - Garlic (chopped)
- 1 – Onion (chopped)
- 2 Tbsp - Butter
- 4 Tbsp - Cooking Oil
- 2 Cups Gata (coconut milk)
- 10 Pieces Chili Pepper (chopped)
- ½ Tsp – Black Pepper
- 2 Tbsp - Vinegar
- 1 Tbsp - Patis (fish sauce)
- 1 - Chicken Cube
- In a pot add butter and oil when hot add garlic, onion and ginger saute
- Add chicken breast, vinegar and patis
- Add hot chili pepper, gata and chicken cube mix well
- The gata has lessen and has thicken it is already cooked.
- It is best to serve hot over rice and ready to eat.
