They mistakenly brought out the Paella Valenciana , despite Mom Violy repeating the order three times to the person who took it. It turned out the cook on duty made the error, even though it was written down clearly. We know Paella Negra takes a long time to prepare, which is why Mom Violy had requested it to be cooked beforehand. She wanted it as her main meal, but because of the mix-up and feeling hungry, she took a piece of Carmina’s Turkey Club Sandwich and asked for the bacon on the side. The Filipino Traditional Kare kare is made of peanut butter sauce cooked with ox tail, ox tripe, eggplant, string beans, bok choy and banana blossom. The modern kare kare is made with chicken, beef ribs, seafood or vegetable.
No matter how you want to make your kare kare it will always have the traditional sauce in order to make it taste how it is supposed to be the Filipino way.
Main Ingredients:
- 10 pcs - String beans (cut into 2 inch)
- 1 Small Banana Blossom (sliced)
- 1 - Bunch Baby Bok Choy
- 1 - Medium Eggplant (sliced)
- 1 - Medium Onion (chopped)
- 3 - Cloves Garlic (minced)
- 5 Tbs - Peanut Butter (Skippy or Lady's Choice)
- 1 1/2 - Tbs Annatto Powder (dilute with 3 Tbs water) or
- 3/4 Cup - Annato Water (1/2 cup annatto seeds soaked in 3/4 cups water)
- 2 Tbs - Patis (fish sauce)
- 1 - Knorr Pork Cube
- Cooking Oil
- 1 1/2 Cup Water
- 1/4 Cup - Cornstarch
- 1/2 Cup - Sauteed Shrimp Paste
Ox Tail Kare Kare Ingredients:
- 1 Kilo Oxtail
Ox Tail Kare Kare Ingredients:
- 1 - Kilo Beef Tripe (sliced)
Beef Short Rib Kare Kare Ingredients:
- 1 Kilo - Beef Short Rib
Seafood Kare Kare Ingredients:
- 1/2 Kilo Shrimp (clean)
- 2 - Crabs (steam) (cut in the middle after cooked)
- 1/2 Kilo - Mussels (boiled in 3/4 water)
- 1 - Medium Squid
When you decided to cook the kare kare with beef tripe you will be cooking it first by placing it in a pot with 4 cups of water boil for one hour. Remove from water and set the beef tripe aside.
It is best to cook the kare kare in a pressure cooker otherwise if you don't have one you can also cook this on your stove top.
Cooking Instructions:
Step 1:
- Heat oil in the pressure cooker or medium pot.
- Sauté garlic and onion
- Add the peanut butter cook for three minutes.
- Add the ingredient in which you plan to use for your kare kare (oxtail, beef tripe, beef short rib, shrimp, crab, mussel or squid)
- Pour annatto water cook for 10 minutes.
- Add patis and pork cubes
- Add cornstarch and water
- Cover the pressure cooker or pot cook for 30 minutes.
- Remove lid add banana blossom, string beans, eggplant and bok choy cook for 25 minutes,
- Transfer to a serving bowl and can be eaten with shrimp paste now it is ready to eat.
